The Spanish organic red wine Prohom Experientia Negre is made from grapes from certified organic cultivation. Due to the low plant density of only about 2700 vines per hectare, the average yield is 5500 kg grapes per hectare. After the grapes are harvested by hand, they are fermented separately at 25 to 28 degrees Celsius for 15 days. Afterwards they remain on the mash for two weeks. Before the finished wine is bottled, the varieties are cuvéed and then aged in French oak barrels for ten months before bottling.
The wine is characterised by its full-bodied and round taste. It is structured and fruity, with scents of cherries and strawberries and a hint of balsamic vinegar. Furthermore, the Prohom Experientia Negre has a mild acidity and well-integrated tannins. The finish is long and persistent.
This gastronomic red wine goes well with grilled or roasted duck and lamb or with hearty vegetable dishes and wild mushrooms.
