The Gavalas Posta
The Assyrtiko grapes of the wine come from young vines in the vineyards of Megalochori. The wine is classically vinified in stainless steel tanks at controlled temperatures and matures for 3 months on the lees.
It exhibits aromas of green apple, citrus fruits, and white flowers, has a medium body with pleasant acidity, and a refreshing aftertaste. It is made up of 60% Assyrtiko grapes and 40% Monemvasia grapes.
Gavalas Winery
The family-run Gavalas Winery is one of the oldest and leading “Canavas” on the island of Santorini. The vineyards consist of limestone and a mix of chalk, slate, ash, lava, and pumice.
The low rainfall, combined with the strong winds in the summer, results in a low grape yield and thus naturally generates the outstanding quality of the Santorini wines.
In the summer months, the vines are “watered” at night by the fog rolling in from the sea, creating a kind of gentle artificial rain.
