Gavalas Winery: A Tale of Tradition and Quality
Gavalas Winery, a historic winery, is located in the traditional village of Megalochori on the island of Santorini. This stone building was once an old canava-winery, reflecting the traditional architecture of ancient Thira. With respect for local culture, Gavalas Winery has retained all the original areas of the winery, such as cellars, grape stomping rooms, and old entrances.

At the same time, Gavalas Winery has created a modern section equipped with high-tech equipment to produce high-quality wines. Today, the winery produces ten different labels with the aim of expressing the complexity of Santorini’s terroir.
Unique Varieties and Terroir
Santorini is home to approximately 40 different indigenous varieties that grow on the island’s 1,300 hectares of vineyards. The noblest variety is Assyrtiko, which covers 75% of the island’s total vineyards. Alongside Assyrtiko, Gavalas Winery also uses other varieties like Aidani, Athiri, Mavrotragano, and Mantilaria for producing dry and sweet wines.
Climate and Cultivation
The climate of Santorini is characterized by mild winters followed by long, hot summers. The reduced rate of rainfall and the strong winds result in a very low yield, which is normally about 3000 kg/ha. To protect the production from the winds, vines are pruned in a low basket shape, called kouloura. At the same time, high moisture levels help the soil to absorb water during the night, giving it back to the vine during the day.
Soil and Environment
The soil is a mixture of lava and volcanic ashes. This volcanic soil lacks organic matter, making it resistant to diseases. Another important factor is that Santorini’s vineyard has never been affected by phylloxera. As a result, the vineyards of the island have never been replanted, making them one of the oldest in the world.

Gavalas Winery’s wines are now distributed all over Greece and exported to many international markets like the USA, Japan, Cyprus, Belgium, and the UK.
