“Canace” Nero di Troia
In the shadow of Castel del Monte, on the border between Apulia and Molise, the Canace, an exquisite wine made from 100% Nero di Troia grapes, is cultivated. This autochthonous grape variety, with its roots in ancient Greece, finds ideal growing conditions in the region’s calcareous gravel soils, which extend up to 480 meters above sea level. The careful cultivation and late harvest in November, followed by a gentle destemming and crushing of the overripe grapes, initiate a process that allows the wine to ferment in stainless steel tanks. After undergoing alcoholic and malolactic fermentation in cement tanks, the Canace rests for eight months before being refined for twelve months in French oak barrels.
With a rich bouquet of forest and blueberries complemented by spicy and balsamic notes of cocoa, coffee, licorice, and leather, the Canace offers a complex and inviting nose.
On the palate, it is characterized by its pleasant softness, round tannins, and fine acidity, leading to a long-lasting, flavor-intensive finish.
Suitable Foods
The Canace is recommended as an ideal companion for the barbecue season, perfect with steaks, hearty sausages, as well as lamb and venison. In the cooler season, it pairs excellently with robust meat dishes such as braised roast or beef roulades, but also with a selection of cheeses, or simply for enjoying in good company.
