Description
Monemvasia
Crafted from organically grown Monemvasia grapes from the island of Paros, close to sea level, this wine is distinguished by its meticulous handwork. The grapes are manually harvested into 12-14 kg crates and chilled for 24 hours to maintain freshness and quality.
The wine undergoes a six-month fermentation phase in stainless steel tanks on fine lees, imparting a special depth. After gentle filtration, it is bottled. The wine shines in a light golden color with olive green highlights.
Its aroma initially combines fresh citrus fruits and apple blossoms, followed by nuances of fennel and eucalyptus, rounded out with laurel and a hint of orange liqueur. Taste-wise, it offers a full-bodied, mineral-salty experience, culminating in a refreshingly concentrated finish.
OuSyra Winery
The OuSyra Winery, founded four decades ago by Edward Maitland-Makgill-Crichton and Eileen Velissaropoulos on the Greek island of Syros, symbolizes the fusion of tradition and innovation.
The couple, after Edward’s studies in Oxford and an inspiring world tour, returned to Syros and established OuSyra with the goal of creating a winery that emphasizes the principles of sustainability and biodynamic agriculture.
By combining Edward’s global perspectives and Eileen’s deep understanding of local culture, the winery produces high-quality wines that reflect the essence and history of Syros.
Suitable Dishes
This Monemvasia pairs excellently with Mediterranean fish dishes or seafood, as its mineral-salty notes highlight the flavors of the sea. It is also an excellent choice for spicy dishes, like grilled vegetables with fennel or chicken seasoned with laurel.
The complex aroma profile of Monemvasia offers a harmonious contrast to dishes with orange liqueur or eucalyptus notes.
