Serifiotiko Old Vines
The Serifiotiko Old Vines, crafted from 35 to over 80-year-old, ungrafted Serifiotiko vines, hail from the mountainous terrace vineyards southwest of the winery. These ancient vines, adapted to both wind and UV radiation, produce grapes that are harvested into 12-14 kg crates and chilled for 24 hours.
After pressing and a 21-day fermentation in stainless steel tanks, the wine matures for 5 months in stainless steel. It exhibits a pale lemon yellow color and exudes dusty, stony citrus aromas with notes of lime, grapefruit, apricot, pear, and a hint of clementine peel and saltiness.
Taste-wise, it is smoky, extremely dry, chalky, and slightly peppery, revealing a rare depth and complexity for a wine not aged in oak barrels. The finish is long-lasting, leaving a memorable sensory impression.
OuSyra Winery
The OuSyra Winery, founded four decades ago by Edward Maitland-Makgill-Crichton and Eileen Velissaropoulos on the Greek island of Syros, symbolizes the fusion of tradition and innovation.
The couple, after Edward’s studies in Oxford and an inspiring world tour, returned to Syros and established OuSyra with the goal of creating a winery that emphasizes the principles of sustainability and biodynamic agriculture.
By combining Edward’s global perspectives and Eileen’s deep understanding of local culture, the winery produces high-quality wines that reflect the essence and history of Syros.

It also pairs well with light appetizers featuring citrus fruits or a fresh, peppery arugula salad, complementing the subtle peppery note of the wine. Its complex structure also makes it an excellent companion for spicy Asian dishes or light vegetarian meals.
