Description
Poggio Civetta
The winery is located near Florence in the middle of Tuscany. They produce traditional Tuscan wines with a modern flavor profile, placing great emphasis on fruitiness and freshness. In the traditional Governo-process, 10% of the grapes are dried and only added to the young wine for the second fermentation. The wine ages for five months in wooden barrels before bottling.
On the palate, the Governo Poggio Civetta is characterized by its acidity and spicy nature, as well as the soft mouthfeel. The tannins emerge strongly and aromas of vanilla as well as blackberries and cherries can be perceived. Notes of fresh forest floor and smoke are provided by the Sangiovese.
Matching dishes
Governo Poggio Civetta pairs particularly well with grilled meats, hearty pastas and stews.
