This wine from Santorini is made from the exquisite white grape variety Assyrtiko, with grapes carefully selected from the island’s traditional vineyard.
The characteristic blue bottle of the Gavalas Winery encloses a piece of Santorini, as the Assyrtiko comes from one of the oldest vineyards in Greece (approximately 160 years old). This vineyard has never been affected by phylloxera, and the grapes come from original vines.
The wine is arguably the most distinctive dry white wine. It has a medium lemon color with golden nuances. On the nose, delicate fruit aromas of pear, lemon, and pineapple are discernible.
The bouquet is spicy, testifying to its origin with characteristic petrol notes; flint, gunpowder, honey, peach, grapefruit, orange peel, and pear form an intoxicating set.
On the palate, the wine is very full-bodied with dense, juicy fruit and expressive acidity that balances with an oily sensation.
Gavalas Winery
The family-run Gavalas Winery is one of the oldest and leading “Canavas” on the island of Santorini. The vineyards consist of limestone and a mix of chalk, slate, ash, lava, and pumice.
The low rainfall, combined with the strong winds in the summer, results in a low grape yield and thus naturally generates the outstanding quality of the Santorini wines.
In the summer months, the vines are “watered” at night by the fog rolling in from the sea, creating a kind of gentle artificial rain.
