The blue Gavalas Santorini Assytriko PDO
This Santorini wine is made from the exquisite Assyrtiko white grape variety, whose grapes are carefully selected from the island’s traditional vineyard. The characteristic blue bottle of the Gavalas winery contains a piece of Santorini, because the Assyrtiko comes from one of the oldest vineyards in Greece (approx. 160 years). This vineyard has never been affected by phylloxera and the grapes come from original vines.
The wine is probably the most distinctive dry white wine. It has a medium lemon color with golden nuances. Delicate fruit aromas of pear, lemon and pineapple are recognizable on the nose. The bouquet is spicy and testifies to its origins with characteristic notes of petrol, flint, gunpowder, honey, peach, grapefruit, orange peel and pear create an intoxicating set. On the palate, the wine is very full-bodied with dense, juicy fruit and expressive acidity balanced with an oily feel.
Winery Gavalas from Santorini
The family run Gavalas Winery is one of the oldest and leading “Canavas” on the island of Santorini. The vineyards are composed of limestone and a mixture of chalk, shale, ash, lava and pumice. The low rainfall in connection with the strong winds in summer lead to a low grape yield and thus naturally generate the outstanding quality of Santorini wines. During the summer months, the vines are “irrigated” at night by the fog rolling in from the sea, creating a kind of gentle artificial rain.
